Mom’s Favorite Melt-In-Your-Mouth Brownies

The other day I was trying to follow this brownie recipe by The Stay At Home Chef, but I may have made a tiny mistake…

It all started when I couldn’t find my 3/4 measuring cup, which I needed to use for the flour, so I thought I’ll just use the 1/4 cup three times so I don’t dirty any more utensils. So I measured out three 1/4 cups of flour and put it in the mixing bowl. Perfect. Next, I had to put in 1/4 cup of cocoa powder. So I put in 1/4 cup of cocoa powder… and then another one… and one more after that… and right after the third 1/4 cup of cocoa powder was in the mixing bowl, I realized that I just put in triple the amount.

Being the perfectionist that I am (especially when it comes to baking), I was freaking out! So I ended up messing with the rest of the recipe and adding a few things to try to balance out the cocoa powder. I was really nervous that they wouldn’t be the right texture or taste wrong. I said: Gemma, calm down, it’s chocolate, they will taste good. Chocolate always tastes good. After I cut them, I was still nervous, so I tried one. I was actually really upset about them; I thought they were too dense. So I had my mom try one, and I said “It’s too dense,” I was just really upset that I messed up. But she told me, “No, Gemma, I love the texture! They kind of melt in your mouth. These are some of the best brownies I’ve ever tasted!” I think for me it was a confidence issue, I tasted them again a little while later, and I realized what my mom was talking about! These are honestly the best brownies I’ve ever made! They have this fudgy texture that makes them just melt in your mouth!

Ingredients:

  • 1 cup + 6 tablespoons melted salted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup vegetable oil
  • 2/3 cup melted semi-sweet chocolate
  • 1 3/4 cup flour
  • 3/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons espresso powder
  • 3-4 big handfuls chocolate chips

Instructions:

  1. Preheat oven to 350 degrees F. Grease and line two 9×9 inch pans with parchment paper.
  2. Pour melted butter into a large mixing bowl and whisk in the sugar until thoroughly combined.
  3. Whisk in eggs, vanilla, and vegetable oil until smooth.
  4. Whisk in melted chocolate until combined and smooth.
  5. Fold 1 1/4 cup flour into butter mixture until just combined with rubber spatula.
  6. Fold in the cocoa powder, salt, espresso powder, and remaining flour until combined and smooth.
  7. Fold in chocolate chips.
  8. Pour batter into prepared pans and smooth the top.
  9. Bake in preheated oven for 30 minutes. Wait until the brownies are about room temperature to cut (about 45 minutes).
